I’ve always been a mushroom-lover… blame it on my upbringing. I grew up in the woods, with two generations of wild mushroom foragers before me.

Hope you’re all having a lovely weekend! It was a beautiful day here today, just absolutely perfect weather! We worked our butts off, got a little sunburned, and are now collapsing on the couch. Taking bets on if we’ll be able to move tomorrow...

We’re always finding treasures around the homest We’re always finding treasures around the homestead— relics of a different time... lots of old bottles and rusty stuff, especially old farming trinkets and tools (we once dug up an entire wagon wheel!).
.
We also have some pretty cool rocks here! They are scattered about our woods and seem to appear out of nowhere in our hay field. I wish I knew more about them! I love finding these gifts from Mother Nature... or perhaps someone else who dug them up 100 years ago and stashed them out there to get rid of them.
.
Karl found this beauty today, along with some others including a gorgeous, gigantic 200-pounder! If you need some calming entertainment you can see him scrub it clean in my stories tonight! 😆

Napa Cabbage Salad with Butter Toasted Nuts! This Napa Cabbage Salad with Butter Toasted Nuts! This is my (much healthier) version of a popular potluck salad. It’s the perfect salad for Spring and it’s one of my favorites!
.
In partnership with @kalonasupernatural, who makes delicious butter in post-World War II era butter churns with cream that comes from pasture-grazed cows. How awesome is that?!
.
Napa Cabbage Salad with Butter Toasted Nuts
.
🧈For the nuts:
2 Tbs Kalona Organic Salted Butter
1/2 cup raw sliced almonds
1/4 cup raw sunflower seeds
Pinch of salt
.
🍯For the dressing:
2 Tbs honey
2 Tbs apple cider vinegar
1 Tbs extra-virgin olive oil
2 tsp soy sauce
Pinch of salt
.
🥗For the salad:
1 medium head Napa cabbage
4-6 radishes, sliced
3 green onions, whites and greens, diced
.
Melt the butter in a skillet and sauté the almonds and sunflower seeds over low-medium heat until they are starting to brown, about 5 minutes. Pour the nuts and any extra butter onto a plate and sprinkle with a pinch of salt.
.
To make the dressing, simply whisk together the honey, ACV, olive oil, soy sauce, and salt.
.
Cut the cabbage into shreds, and toss it in a bowl with the radishes, green onions, and buttered nuts. Make sure to pour any extra butter drippings from the nuts into the salad as well! Reserve some nuts, radishes, and green onions for the top as a garnish if you’d like.
.
Pour the dressing over top and toss to combine. Let sit 10 minutes before serving. Enjoy! I love to serve this salad with anything grilled!
